Cava gives us the fruitiness of the Chardonnay completed a small part of the refinement that adds Parellada. The long aging of more than 30 months and no dosage brut nature lead us to the purity of cava.

CHARACTERISTICS OF THE VINEYARD

The Sabartés property is located in the southern most part of the Penedès region. The land is full of clay and the presence of silt. The maritime influence on this land is very high because it is located a few kilometres from the sea. This Mediterranean character ends up giving a fruitier wine base.

The Sumarroca estate notable for having poor land, calcareous and a gravel presence. The influence of the sea is diminished by the effect of the Garraf to the dry breezes and coastal mountain range that reduces excess dry wind coming from the rear. These conditions give bases elegant wines with a fresh fruitiness and highly balanced.

HARVEST

The year 2013 began with heavy rains in October but during the rest of the winter it hardly rained and the temperatures were very mild. Towards the end of February and March temperatures dropped and made the budding a bit later. In April the temperatures rose to extremes, with the rain, we got back to values ​​practically like February during May, with heavy rainfall. The temperatures stayed low in June, and it was not until July when the heat returned with very little rainfall. During the rest of the maturing in August and September, temperatures were fresh, especially at night, which caused ripening to arrive a week late and completely staggered.

TASTING NOTES

Intense aroma with lots of fruity and creamy notes of Chardonnay combined with pastry notes from a long aging. In the mouth, good structure and creamy with a fresh finish and a bit dry (brut nature) expressing the true potential of cava. The mousse is extremely thin and very well integrated into the complexity of cava.

PRODUCTION

Fermented separately by variety. Static racking for 24 hours. Fermentation in stainless steel tanks at a temperature of 14ºC for 18 days. Aged in stacks for a minimum of 30 months.
