Our longest serving cava with red grapes of pinot noir developed to make a white wine. A 36-month long aging process to complete its elaboration.

CHARACTERISTICS OF THE VINEYARD

Vineyard located in the highest part of the Sumarroca estate in the municipality of Piera. Protected from the east through the Aguila forest and to the north and west by the Vermella. This stops the influence of the early morning sun and late in the afternoon making ripening of the vineyard much calmer. It also protects the direct influence of the sea breezes and the dry wind of the interior. The terrain is extremely shallow, loamy and calcareous.

HARVEST

The 2012 harvest was characterized by a winter with mild temperatures and low rainfall. In fact, it did not rain from November to just before budding. Even with the mild winter, budding was delayed several days due to the early spring which was a little cooler than usual with some rain that allowed the adequate growth of the plant. From late spring temperatures started to rise and the rain diminished quickly. But it rained 25-35 litres in May, June, July and August, which together with relatively low humidity, made the maturity and sanitation adequate. The colouring and maturity were at the usual times.

TASTING NOTE

Very fresh nose with mineral notes and hints of red fruits, all from pinot noir. At the bottom it leaves light subtle notes of pastry which can be found in long aged cava. On the palate the minerality is more pronounced, together with a refreshing structure and also notes of Asian fruits. Acidity is present in the form of freshness and it is balanced with a small presence of sugars from disgorging.

PRODUCTION

Pinot noir harvested at night to avoid the extraction of the colouring matter by contact with the skins and the must. 10ºC immediate cooling and utilization of only 40% of the must flower. Static settling 24 hours. Fermentation in stainless steel tanks at a temperature of 14 ° C for 18 days. Aged in stacks for a minimum of 36 months.
