Covering the Tanks
To maintain the ideal temperature of the cooling jackets (between 16 and 12˚C), the stainless steel tanks in which the wine is fermented are inside the cellar. This means there is less thermal contrast with the outside temperature and the cooling mechanisms do not need to be activated as often.
We also encourage night-time harvesting because the temperature of the grapes is lower and, once in the winery, they will require less energy to reach the optimum temperatures to prevent oxidation.
