Characteristics of the vineyard
Queto plot is a Xarel.lo vineyard of more than 40 years, chosen to make this wine due to its slow maturation which makes the latest plot at Sumarroca Estate to be harvested. It is planted in a very much calcareous soil, semi-deep and extremely poor in organic matter. The clone is unknown, and together with this soil makes the maturation to be very slow, maintaining a marked freshness and high fruitiness.
Yellow color with a certain intensity that denotes a long aging. On the nose, it is shy at the beginning but quickly wakes up, contributing in the first instance notes of fresh lees. Opens up remarkably in the glass, providing fresh notes of citrus fruits, peach and apricots, complemented with toasted and creamy notes of the aged part in barrels. On the palate maintains the aromatic characteristics, especially the freshness since the beginning. Delicate complexity and certain velvety notes that accompany a refreshing finish.
The harvest is done by hand and put to macerate with carbonic snow for 24 hours, directly in the press. With this maceration we will degrade the cells of the skin, yielding different tastes and aromas. A gentle drain ensures optimal use of the free run juice, fermentation at controlled temperature and final racking at the end. Following the wine rests with its lees in stainless steel for 6 months. Keeping the lees, we separate the wine into two processes; On one hand we age in a reductive way in Magnum cava bottles, keeping the essence of young wine, while the other part we age it in an oxidative way in oak barrels, contributing to the mixture a certain structure and complexity. After one more year, we will make the final blend of the two parts. Once the wine is clean, we will age it one more year in the cellar before putting it on sale.
