Characteristics of the vineyard
The Sumarroca estate is known for its poor, calcareous and chalky gravel field presence. The influence of the sea is reduced by the effect of the Garraf mountain range, which dries the sea breeze, while the pre-coastal range reduces excess dry wind from the interior. These conditions result in wines with a very elegant base and with a balanced and very fresh fruitiness. The Sabartés estate is located in the southernmost part of the Penedès region. The terrain is full of clay with presence of silt. The influence of the sea, which lies a few kilometres away, is undeniable. This Mediterranean character gives more fruitiness to the base wine.
Tasting notes
Pale yellow colour. Fresh or highly complex aroma that mix first notes of pastries, due to the aging of 36 months , with light notes of fresh fruit from the base wine. The mouth is fresh, soft and with very fine bubbles that fit perfectly into the complexity of cava. Elegant, serious, long, dry finish where all the frankness of cava is expressed.
Production
Winemaking separately depending on the variety. Static racking for 24 hours. Fermentation in stainless steel tanks at a temperature of 14 ° C for 18 days. Aged in stacks for about 36 months.
